Cream of Broccoli Soup

Ingredients

 2 cups Steamed Broccoli Florets

1 cup Steamed White Onion

1/2 cup Butter

1/2 cup All purpose flour (Maida)

2 cups Milk (at room temperature)

1 tbsp Salt (or as per taste)

1/2 tbsp Black Pepper

1/2 cup Shredded Cheese

Vegetable Stock *

Method

Take fresh Broccoli and cut it into small equal sized florets. Take medium sized onion and cut it into long, thin slices. Now take a pan with some water and put the Broccoli florets and onion slices into it and boil them for around 3-4 minutes.

Put the butter in the pan and heat it till it melts. Now add all purpose flour in the butter and stir well. Note that, the amount of butter and all purpose flour should be equal.

Now add some vegetable stock into the mixture to bring it to a required consistency. After a single boil, add milk and boil again.

After the mixture has come to a good boil, add the vegetables into it and boil for around 5 minutes.

Now add salt and black pepper to the mixture.

Finally add shredded cheese to the soup and stir it well till it melts.

If the soup seems to be thick add some more vegetable stock into it and boil till it reaches the required consistency.

*Tip: The water which was used for boiling broccoli and onions can be used as vegetable stock.
